The cheese exported last year from N<>v Zealand fetclied .au average of a small frac tion Jess than Gd. per pound. The actua figures aro 5.94Gd. per lb., or £2 15s. 6sd per cwt. At this figure cheese-making pay: l)cttcr than butter-making; and it is not t< bo wondered at that a number of faetorie: have changed from butter to cheese. Thcr< is apparently a good prospect of tile prici remaining up in tho immediate future, bul f^n S bo perfectly safe against < frill. I'actory directors who re-model thoi. premises for cheese do so at a risk —though s small one—of having, spent money in vain In his annual report tho Secretary of Agri culture says: "Should last season's prices hi maintained, the manufacture of cheese o high quality would undoubtedly bo the more profitablo (than butter); but it is impossibh to foretell with any degree of certainty whal course tho market will take; therefore, f great dpal of caution and patience is requirec on the part of tlioso responsible for tho work mg of factories." The report foreshadow! legislation to control the manufacture o private dairy-made butter, the quality o which has been unsatisfactory.
