Dear Sir,—We duly received from you •i loaf of bread, and have pleasure in reporting that we kept the same for two days before cutting it, therefore the loaf was three days old when examined, We found that tho loaf was beautifully moist, it had a nice leafy pile, it was free from holes, and was thoroughly fermented, Then, as regards the most importau test of all, the flavour of the loaf, we are bound to say that it was one of the nicest loaves of bread to eat that wo have ever had off the compressed yeast.
