The first shipment of live mussels from Kaikoura to Hong Kong left Christchurch airport last week. Virgo Fisheries, (pictured) Ltd, of Kaikoura, has exported live crayfish to Japan since 1984 but its live mussels are a new export market for the company. The mussels are farmed in the Marlborough Sounds, transported to Kaikoura, chilled and repacked, and trucked to Christchurch Airport. The complete operation from the Sounds to Hong Kong takes between 24 and 39 hours.’
