the main processor of farmed deer in Waikato and Bay of Plenty says a joint statement by Summit and Fortex. Fortex, which includes Canterbury Venison (N.Z.), already processes and markets more than 25 per cent of the New Zealand kill of farmed deer and requires

an increasing quantity of venison to satisfy the market’s demand, says the statement. The directors hope the Summit-Fortex joint venture will increase the number of farmed deer going through Summit’s slaughtering plant.
