Venison premium
Canterbury Venison, Ltd, the operator of a deer slaughtering premises at Ashburton and an exporter of venison, has offered a premium price to deer farmers to attract stock for killing over the winter months. The premium price is $5.40 per kg for the AP2 grade, 50c more than the current schedule price for that grade.
C.V.L. has said that killing stags during the winter produces lean, high quality venison, in good demand in Northern Hemisphere countries.
