I had never savoured the delights of “country-wine” before my arrival in New Zealand. Soon after, I was offered a gloriously heady, golden, Christchurchmade potion brewed from the elder flower. I was bowled over, not only by its considerable alcohol content, but by its deliciously fresh liqueur taste and “feel.” Since then I have enjoyed other country-wines, but Mollie Harris’s cheerful little book introduced me to a vast new variety of ingredients.
