I had never savoured the delights of “country-wine” before my arrival in New Zealand. Soon after, I was offered a gloriously heady, golden, Christchurchmade potion brewed from the elder flower. I was bowled over, not only by its considerable alcohol content, but by its deliciously fresh liqueur taste and “feel.” Since then I have enjoyed other country-wines, but Mollie Harris’s cheerful little book introduced me to a vast new variety of ingredients. Here are recipes for gorse-flower, broad-bean,
sage, and, of course, parsnip wine. The stout of heart may adventure on to nettle beer, marrow rum, and damson gin. Mollie Harris is an encouraging teacher who loves her art for its traditional herbal benefits, and for the sheer pleasure of sharing a glass made from fruits and flowers of past seasons. For people who enjoy stocking the larder with preserves, jams and pickles, the book opens up a new field of creativity. Those of us who only sip the efforts of others can enjoy the anecdotes which the author includes from her own life in rural England, and the quotations of comments from famous wine-lovers. — Ruth Zanker.
