Restaurant demoted
NZPA-Reuter Paris The Michelin guide, France’s gastronomic bible, demotes Lasserre, one of Paris’s leading restaurants, from three stars to two in its 1984 edition. But the number of threestar restaurants in Paris remains at four with the promotion of Jamin, a newcomer in the 16th district. The other three are the
Tour d’Argent, Taillevent, and I’Archestrate, best known for its light nouvelle cuisipe dishes. Lasserre, next door to the West German Embassy on Franklin Roosevelt Avenue, kept its three stars for 22' years. Outside Paris there is one newcomer to the three-star list, Esperance, in Vezelay, a cathedral town south of
Paris. Michelin now records 18 three-star restaurants in France, 90 with two stars, and 534 with one star. Editors of the austere red-covered guide traditionally remain anonymous and never explain their choices, leaving chefs and hoteliers to thumb through the new edition nervously to see if they are included.
