BAY TREE Lauras nobilis Bayleaf is a fragrant condiment used in European cooking. Along with thyme, it is famous for its use in bouquet garni for cooking fish, soups, chowders, stews,' corned beef and pickled pork. Bay trees make ideal tub shrubs, being evergreen and easily trained or shaped. Grow in full sun away from wind and frost in well drained, slightly acid soil, FISH WITH BAY LEAVES RECIPE: Roll fillets of fish and place in a buttered, oven-proof dish with a lid. Add two bay leaves, pour a glass of white wine over the fillets then sprinkle with choped chives or shallots, also a few more knobs of butter. Cook, covered, in a slow oven.
