Banana puffs

What you need: 2 cups flour 1 tablespoon sugar 3 teaspoons baking powder Vi teaspoon salt 1 egg 1 cup milk 4 ripe bananas 1 tbs cooking oil What you do: 1. Mix flour, sugar, baking powder and salt in a mixing bowl. 2. In another bowl, whisk together the egg, milk and oil, then add this to the dry ingredients. If mixture is too thin, add a little more flour. 3. Slice bananas into small
pieces and stir them in. 4. Heat some cooking oil in a frying pan. Use just enough to cover the bottom of the pan. 5. Put spoonfuls of the batter mixture into the pan to make pikelet-sized fritters. 6. Fry the fritters and turn them occasionally until they are browned evenly.
