/ y < i *• r* COMMON THYME Thymus Vulgaris There are over 100 species ol thyme from creeping lawn carpeters to semishrubs. All thymes are perennial and require welldrained soil in full sun. Common thyme grows Io 30cm and flowers in early summer with fragrant lilacpink blossoms. An excellent bee plant, its warm, aromatic flavoured leaves make it a versatile kitchen herb and an essential ingredient of bouquet garni. Other prized kitchen nerbs are lemon and orange bush | thyme. CARROT AND THYME SOUP RECIPE: A nourishing winter soup with the tonic and digestive properties and the vitamin rich carrots, tomatoes and lemon juice. ’/fib coarsely grated carrot, 4 chopped shallots, 7tlb chopped tomatoes, 1 chopped garlic clove, 8 branches of thyme, lied, 2 tsp paprika, 1 tbsp lemon juice, 2 tsprs salt, 3 pints chicken stock. Put all ingredients in saucepan and simmer with the lid on for 30 mins. Remove thyme stalks and serve with a sprinkling of parsley.
