Pistola cut of lamb in demand

NZPA staff correspondent London A new cut of New Zealand lamb, a pistola. created interest at the New Zealand Meat Boards stand at the fast-food fair in Brighton this week. A pistola is a cut “comprising the legs and the whole loins, excluding the breast, which is boned and rolled.’ - said the board’s catering officer, Mr Roy Hicks. “We are getting a lot of interest in pistolas from caterers and also in boned and rolled saddle of lamb,” he said. “Caterers are keen to buy pre-boned meat in any form. The demand is definitely growing.” Other fast-food New Zealand lamb cuts — Mr Hicks interprets the term to mean all quickly prepared food — to be featured are packs of minced and cubed lamb, riblets, double loin chops, and leg bone steaks. More than two million New Zealand lamb carcases, equivalent to 30,000 tonnes, would be consumed through catering outlets in Britain by the end of this year, Mr Hicks said.
