Corn Fritters
You Will Need: ■ 1 small tin of corn (310 gms) 2 eggs 6 level tbsps plain flour 1 level tsp baking powder _ 3 heaped tbsps grated cheese 50 gms butter What To Do: 1. Drain the corn through a seive. 2. Put the eggs, salt and pepper in a large bowl and beat well. 3. Sift in the flour and baking powder. Beat well. 4. Stir in the cheese and corn.
5. Melt the butter in a frypan. 6. When bubbling drop a tablespoon of the mixture in at a time. 7. Cook until golden brown underneath, then turn and cook on the other side. 8. Place on paper towel to drain. Makes about 10 fritters.
