The very first essential of looking good is to eat well. And we all- want to look good, especially during the summer. Actually, summer.- with it’s fresh .natural foodstuffs is an excellent time to watch weight and aid extra efforts for looking tops.

I have just finished reading an excellent little handbook called “Looking Good" by Sally Ann Voak, published in association with Thames Television.

Although this book covers many areas from makeup to hair care, I couldn’t resist sharing some of the recipes given in the diet section. They are low in calories, good enough for the rest of the family to enjoy, and easy enough to prepare if you want to eat separately. Breakfast in a glass 1 egg small carton natural yogurt juice of 1 fresh orange pinch of nutmeg Method: Whisk in blender or by hand. Pour into a glass and serve immediately. Serves one. Calories per serving: 163. Celery and tomato starter 4 sticks celery 25gm (1 oz) cornflour 25gm (1, oz) skimmed milk ■' poder ' • lOOgm (3J oz) can pink salmon ’ . _ 6 large tomatoes 25gm (1 oz) grated Edam cheese chopped herbs Method: Cook chopped celery in water until tender. Blend cornflour with a little water until smooth, add skimmed milk powder, celery water to make 0.25 litre (| pint). Bring to the boil and simmer. Season and add drained, flaked salmon. Cut tops off tomatoes, scoop out pulp and add to sauce, then pile the sauce

SPINACH AND TOMATO SALAD 350 gm (14oz) spinach, washed | large Spanish onion 4 large ripe tomatoes 1 teaspoon com oil 4 tablespoons orange juice Method: Tear spinach leaves into pieces and place in a salad bowl. Slice onion finely, break up into rings and place in a separate- bowl with sliced tomatoes. Season. Whisk together oil and orange juice. Toss onions and tomatoes in the mixture, then pour onto spinach. Toss well. Serves four. Calories per serving: 25.

CHICKEN MARINATED IN PIQUANT SAUCE 1 chicken portion, uncooked | teaspoon freshly ground pepper i teaspoon salt Pinch nutmeg Large carton natural yoghurt 1 teaspoon ground turmeric | teaspoon mild curry powder 1 teaspoon lemon juice Method: Remove skin from chicken: make two or three cuts in thickest part of flesh. Wipe dry. Rub flesh with pepper, salt and nutmeg. In a small bowl, mix yoghurt with turmeric, curry powder and lemon juice. Spoon over chicken. Leave to marinate all day ,or overnight in a cool place, loosely covered with foil. Cook uncovered in the centre of a preheated moderate oven (350 F degrees) for 45 minutes. Baste two or three times. Serves one. Calories per serving: 355.

ORANGE SORBET 2 medium eggs separated 40gm (Hoz) skimmed milk powder 0,1 litre (4fl oz) cold water 0.1 litre (4fl oz) unsweetened orange juice Artificial sweetener to taste Method: Whisk egg whites with milk powder and cold water until frothy. Combine egg yolks, orange juice and sweetener and blend into egg whites mixture with rotary beater. Pour mixture into shallow container, freeze until, firm. Whisk again until creamy, and pour into a polythene container. Freeze until firm. (You can freeze the sorbet in orange shells for parties or dinner parties.) Serves five: Calories: per serving: 60.
