To make currant biscuits you will need a mixing bowl, small basin, rolling pin. round cutter, fork, teaspoon, two tablespoons, wooden spoon for mixing, and a measuring cup. Rub in the butter, using your fingers to work it into the drv ingredients. 4. Add the sugar, currants and grated lemon rind. Mix well. 5. Break the egg into the small basin and beat with a fork. 6. Add about half of the egg to the flour and butter mixture. Mix it all together until you have a firm dough. Add a little more egg if necessary. 7. Sprinkle some flour on to the rolling pin and bench or baking board. 8. Roll out the dough until it is quite thin. Prick all over with a fork. 9. Dip the cutter into some flour, and cut out the biscuits. 10. Put all the outside bits together. Roll out again and cut out more biscuits. 11. Grease an oven tray with a buttered paper. Put the biscuits on the tray. 12. Bake in the oven until they are a very light brown, for -about 15 minutes. 13. Remove from the oven. Sprinkle lightly with castor sugar and leave .on the tray to cool. 14. Store in an airtight tin.
