“Togetherness is a late-night cheese omelette coupled with the right mood and the right people.” Such was the advice Robert Carrier claims he was given by a New York hostess, and he follows it up with a selection of suitably exciting dishes which go a long way beyond a cheese omelette — oriental rice salad and sherried mushroom tartlets among them. This is the pattern in this sumptuous, well illustrated cookbook which includes 80 menues and 300 recipes. Each chapter has a chatty introduction — on fondues, or skewered meats, or the perfect mayonnaise — then recipes and wine selections that roam a long way from the initial idea. Carrier is American born, French educated, and lives in England. His enthusiasm for perfection in entertaining makes this a delightful book for cooks prepared to follow meticulous detail with the assurance of a fine result. Mr Carrier gives as the ingredients of .good cooking “patience. time. curiosity, and imagination.*’ Reading his took will help. too. — LORNA BUCHANAN.
