Price of milk
Sir, — In your editorial article of April 10 on the price of milk you suggest that reconstituted . milk in the winter may be the answer to holding the cost of milk to the consumer. The costs that have been increasing the fastest in recent years are still incurred with reconstituted milk. From 1966 to 1977 the costs of processing milk increased by 144 per cent and the cost of distribution increased by 188 per cent, whereas the cost of production only increased by 61 per cent. Obviously, processing and distribution are the areas that should be looked at in order to hold the cost to the consumer. — Yours, etc., R. H. SIMPSON, April 10, 1978.
