Hints for salads
Cook florets of cauliflower in salted water until nearly soft. Mix with mayonnaise and chopped capers.
Par-boil spinach — until soft but crisp — and blend with a wellflavoured mustard dressing and Flavoured with egg-
Mix thin slices of cooked young carrot and turnip in cream cheese beaten with a little milk and lavoured with chopped chives.
Slice cooked beetroot and sprinkle with brown sugar, finely chopped onion and grated fresh horseradish (or a very little horseradish sauce).
