Here is a recipe for a Spanish Fish Pie. It is called Pastel de Pescado and for six persons you will need: 3 tablespoons olive oil 1 cup ground almonds (coarsely ground) 2 cloves garlic 4 onions 1 bay leaf 2 teaspoons salt 1 teaspoon pepper 5 tomatoes 6 fillets of fresh fish 3 cups mashed potatoes Method: Heat oil in saucepan and add the ground almonds; saute for five minutes, stirring frequently, then drain from oil and set aside. In remaining oil saute -the chopped onion and crushed garlic for 10 minutes, adding more oil if required. Add bay leaf, salt,

pepper and skinned and chopped tomatoes and cOok over low heat for 10 minutes. , Grind one of the fillets.of , fish in a food chopper and , cut remaining fillets into thirds. Reserve one third of tomato mixture, strain ' balance through a sieve and add to it the ground fish 1 and the almonds. Cook over 1 low heat for 10 minutes, ' stirring frequently. Butter a 9in casserole and line the bottom and sides i carefully with the mashed ’ potatoes which have been seasoned with pepper and salt. Reserve some potato ' for the top. Arrange layers of tomato mixture and fish fillets until all are used. Cover top with mashed potato. Bake in hot : oven (425) for 30 minutes. Serve with reserved sauce.

Skelton, has arranged four mounts at the Levin Racing Club’s meeting tomorrow to assist the Wingatui jockey, E J. Didham, in his attempt to reach the century. Didham rode his ninetyninth winner at Riccarton on Saturday, and the Levin meeting will be the last one before the season ends on Friday.
