COOKING FOR 1968 Turkey Loaf

If the days after Christmas are hot, left-over turkey can provide some delicious cold dishes. One of them is Turkey Loaf. To serve four you will need: lib minced cooked turkey 2 small onions 2oz fresh breadcrumbs 1 teaspoon mixed herbs Worcester sauce Butter 2 eggs Salt and pepper.

Method: Chop the onions finely and saute them in a little butter until soft. Mix the remaining ingredients thoroughly and bind them with the beaten eggs. Grease a loaf tin and coat the inside with dry breadcrumbs. Press the mixture firmly into the tin, cover with greaseproof paper or foil, and bake at 350 degrees about 40 minutes. Remove from the oven and place weights on top of it to compress it When it is cold, turn it out of the tin and serve sliced, with salads.
