(Bv CELIA TIMMS) Red Cole Slaw makes an interesting variation as a salad. You will need:— 1 red cabbage 1 onion 2 green peppers 2 carrots 1 clove garlic 3 tablespoons butter 3 tablespoons lemon juice 2 tablespoons chopped parsley. 2 tablespoons chopped chives Method: Shred the washed cabbage very finely. Grate the onion, peppers and earrots. Rub a salad bowl with garlic then add the vegetables together with salt, pepper and a pinch of cayenne. Toss well. Heat the butter carefully to avoid browning it, add the lemon juice, parsley and chives, pour this dressing over the vegetables in the, bowl, and toss thoroughly. Serve immediately.
