Cooking '67 TOAD IN HOLE
CB|) CELIA TIMMS) Toad-in-the-hole is usually made with sausages. Here is a different version and, unless you are a sausage fanatic. I think you will like it better than the traditional one. To make sufficient for four you will need: 4 lamb chops 1 cup breadcrumbs 1 teaspoon of chopped parsley and thyme 1 tablespoon flour 1 cup milk 2 eggs Salt Pepper. Method: Trim most of the fat. from the chops and lay them in a deep ovenproof dish which has been sprinkled with the breadcrumbs, parsley and thyme. Make a batter of the flour, eggs and milk, seasoned with salt and pepper, and pour this over the chops. Bake in a moderate oven (350) for one hour and serve with a rich gravy.
