For an apple pie with a difference try the following recipe, which also contains cheese. Ingredients: Shortcrust pastry 1 cupful sugar 1 level tablespoonful flour 1 teaspoon nutmeg J teaspoon cinnamon 1-3 cupful grated cheese Apples

Method: Line a tart plate with thinly rolled pastry. Mix together the sugar, flour and spices and rub a little of this into the pastry in the pie plate. Fill pastry shell with sliced apples sufficient to come above the level of the rim of the plate. Sprinkle over them the remaining sugar and spice mixture. Dot with butter and finally sprinkle over the finely grated cheese Cover with pastry. Make incisions in top with a sharp knife or the prongs of a fork, glaze and bake in a hot oven (400 deg for 15 minutes, reduce heat and continue cooking until apples are tender and pie lightly coloured. Sprinkle with icing sugar before serving.
