Eating From His Hand
A HEAD waiter is like a lion tamer. The lions are seated all around him in the red and gold arena under the lighted chandeliers. At the crack of his whip they obey. For years I was terrified of walking into a big restaurant. I would wait trembling in the doorway until the head waiter deigned to notice me. Of course, he had noticed me from the moment of my arrival. But seeing my abject humility he said to himself “Let him tremble,” before leading me to a table near the service door.—Vivian Ellis, composer of “Bless the Bride” and other musicals.
