A necessity for working mothers and business girls is a file of quick and easy recipes and a stock of food to prepare them- It pays to keep a few tins of meat, macaroni, noodles, spaghetti and rice on hand, as well as a jar of curry powder, beef and chicken cubes and cans of creamed soups. This recipe for potato burgers is simple to make and takes only a few minutes. Ingredients: lib of boiled potatoes i pint of tomato sauce lib of minced beef i of a tablespoon of fin- . ely-minced onions Salt and pepper 1 tablespoon of chopped parsley Method: Dice the potatoes and mix with salt and pepper to taste. Add the onion, pars-

ley and sauce. Divide the beef into eight thin, round cakes and top four of them with the potato mixture. Cover each with another patty and pinch the edges together. Place side by side in a large frying pan containing just enough hot beef dripping to cover the base. Fry Over a moderate heat until brown. Then turn carefully and brown the other side. Top with the remaining potato-mixture and pour over the rest of the sauce. Cover and simmer gently for 10 minutes. Serve with peas or beans. Serves four.
