* had a letter from a reader at Lake Tekapo recently and she sent me this recipe for a fruit square. It is really delicious and I am sure she will not mind if I pass it on. Thank you, Mrs Scott. You Will Need: For the Pastry: 12oe flour Boz butter i teaspoon salt About 2-3rds cup water Filling: 1 cup currants 1 cup sultanas 1 teaspoon cinnamon 1$ cups water 1 cup sugar 2 tablespoons cornflour mixed to a smooth paste with a little water

Method: For the pastry sift the salt and flour and rub in the butter. Add enough water to make an easily-handled dough, but not too sticky. Turn out on to a floured board and roll out. Fold and roll out three times. Allow to stand for a while. For the filling, put the currants, sultanas, cinnamon and sugar into a pan. Cover with the water and boil for five minutes. Thicken with the cornflour and allow to cool. Line a sliee tin with the pastry and prick with a fork. Pile on the filling, spread evenly and cover with a layer of pastry. Mark out into squares prick with a fork. Brush with a little milk and sprinkle with sugar. Bake at 400 degrees for 25 minutes.
