Trichinosis

Sir, —So much ballyhoo has been raised over a case of trichinosis in New Zealand that the record of the disease in the United States may temper any panic. It is caused by the ingestion of the encysted larvae of an unpleasant little parasite. Absolute prevention can be assured by cooking pork till the meat is white, which is effected at 137 degrees Fahr. About 21 million people in the States are infected, most of them so lightly that they seemingly suffer no ill health. (The severity of the clinical manifestations are related to the number of forms developed in an infection). An estimated 350,000 infections develop each year, of which about 300 have clinical symptoms, and of these probably six per cent are fatal. There is no federal inspection of pork or pork products for trichinosis. Incidentally, about six per cent of garbage-fed hogs are infected, against one per cent of grain-fed animals.—Yours, NUMANA.
