Cook With Elizabeth STEAMED STEAK AND KIDNEY RICE

This delightful steamed meat pudding has no pastry crust at all. Steak, kidney and bacon, richly seasoned, are cooked beneath rice in this easy-to-prepare and nourishing dinner for the famliy. Cook it in a large steaming bowl and give it three hours steaming. Ingredients: lib stewing steak 4 oz bacon . 2 kidneys 2 onions } teaspoon mixed herbs 2 tablespoons tomato sauce Salt and pepper

Water or stock to cover 1 cup rice. Method: Remove rind from bacon and chop into small pieces. Chop onion, meat and kidneys, apd turn into a buttered steaming bowl. Add mixed herbs, tomato sauce, salt and pepper, mixing all well together. Pour in sufficient stock, soup or water to cover. Sprinkle a cup of washed uncooked rice over the top and tie down the pudding in the usual way. Cook over boiling water for three hours. Turn onto a hot dish and sprinkle with chopped parsley.
