Chefs' Contest Winner
A Maori boy, built of sugar, a mother swan, made of meringue and filled with marzipan strawberries, and a meringue basket filled with marzipan fruits were among the chefs’ entries in the confectionery contest at New Zealand's first National Food Fair, the chairman (Mr G. Kerr) said yesterday. The £llO first prize, he said, went to a Christchurch entrant, Mr J. Bakerman, of Warner’s Hotel.
“The reason why Mr Bakerman’s entry was selected as the winner was his employment of New Zealand fruits,” said Mr Kerr. Mr Bakerman's entry had a round flan base, filled with fruits and set in a jelly, and a raised mousse and jelly on the top. Extensive use was made of Chinese gooseberries and tree tomatoes. Tree tomato jelly was used for decoration. A further 20 entries for the
different contests for chefs came from Hastings, Te Puke, Rotorua, Mount Cook, Auckland, Wellington, and Dunedin. A chicken, boned, stuffed, and set in a bed of golden aspic, had arrived for the poultry contest. An entry in the same section from an Auckland trainee cook was a chicken covered in chaudfroid sauce. Mr Kerr said the standard of entries was “fairly good for the first year.”
