LAYER PIE
Ingredients: 11b cooked potatoes loz butter 1 egg A little milk 11b skinned sliced tomatoes 1 large onion, chopped 2oz mushrooms Hb corned beef, sliced 1 small tin of peas (or frozen peas) Chopped to garnish.
Method: Cream the potatoes with the butter, egg and milk. Fry together the tomatoes, onion and mushrooms. Put a layer of potatoes in a greased pie dish, then alternate layers of corner beef, tomato mixture, and peas, finishing with potato. Mark the surface attractively. Bake in a moderately hot oven for 15-20 minutes, until heated through and golden-brown. Garnish with parsley.
