Silver Gift Canapes
Something hot and savoury to serve with drinks need not be a matter of making pastry cases. The most attractive hot savouries of the week take only seconds to prepare and two or three minutes to cook. The quantities given here will make one dozen twoinch square savouries. Do a little mental arithmetic and multiply the ingredients according to numbers required. But bear this in mind: anyone who has one bf these will have two. Ingredients: 1 egg white 4 teaspoon salt Good dash pepper 4 cup grated tasty cheese 1 large white pickled onion Bread slices Butter
Method: Remove crusts from bread sliced about J inch thick and cut the bread into small squares. Spread each fairly generously with butter and place, plain side down, on a baking sheet. Whisk egg white very stiffly and whisk in salt and pepper. Finely chop one large white pickled onion or about four if they are the small ones. Finely grate tasty cheese and lightly fold both cheese and onion through the egg white. Pile up on to each small bread and butter square. Place two or three inches below pre-heaited grill until golden brown, which is only a matter of a minute or two. These are delicious eaten not; still attractive to look at and delightfully edible cold.
