Fruit Salad Ring Cake
Ingredients: 4oz butter 4oz sugar 2 eggs 2 bananas 6oz flour 2 level teaspoons baking powder i teaspoon salt loz butter i teacup sugar i teacup passionfruit pulp (If using bottled pulp put down the usual half fruit, half sugar way, just stir and use up to a teacup full, omitting the extra sugar.)
Method: Cream butter and sugar. Mash bananas and beat in, then eggs one at a time. Sift in flour, baking powder and salt and mix. Rub butter thickly over the bottom and sides of a large ring tin. Mix passionfruit pulp with an equal quantity of sugar and turn in to cover the bottom of the tin. Add the cake mixture, dropping it out by spoonfuls and smoothing out. Bake at 400 degrees for 45 minutes. Turn out immediately on to a wire rack
