They are ueucious earner hot or cold so they may be made before tne guests amve. Prepared auead. they are so quick to cook that they may oe done wmle tne oottee neats without a loog-disunce hostess. it you should happen to want a sweet man rauier than a savoury one, substitute a litue sugar for the cheese and sauce and sprinkle tne dnsaned rows with icing sugar instead of salt. They are equally delignttul that way.
Cook toem in clean lard, cooking ou, or even in tine wane dripping. When they are finished iney are not in toe augnttwt degree greasy or over-rich. Quantities given will make 3j dozen. Ingredients; 1 breaktast cup flour 1 teaspoon baking powder loz buuer | i cup finely grated cheese ( t> small drops tabasco sauce I t teaspoon salt 4 tablespoons milk i Oil or fat for trying A little additional salt. Method: Sift flour, baking powder and i teaspoon salt uaio a bowl. Add cheese and loz butter and rub in unul fine. Add sauce and milk and mix to a stiff dough. Turn out on to a floured board and roll or pat out to i-inch thickness. Cut into long narrow strips so that they Look like rather out* size cheese strews. Cut into pieces about 2f inches long —they should be about the size and nearly as long as your Little finger. Heat half a saucepan of lard until smoke rises, then drop the fingers in. one at time, but about a dozen to cook together. They puff and go brown, turning themselves over when they are ready In about two minutes they will be a good brown and light. Strain out and turn on to absorbent paper. Sprinkle iltfttly with salt
