Albino Mushrooms
A Sydney mushroom grower has produced a cultivated “albino’* mushroom-—the gills remaining white instead of turning from pink to black. The mushrooms are grown in sawdust and the grower, Mr L. O'Connor, claims to have cut production costs by 60 per cent. The “albino” grows vigorously and “surfaces” in 10 to 14 days from the time the spawn is planted. It emerges flat—not as a button —and tastes like a wild mushroom.
