Bacon
Sir.—l have been studying the letters on New Zealand bacon, and waiting for some* one to blame the producer. Thank you. "Wiltshire Cured ” 1 will support the producer to this extent. Recent Introduction of a grading system for pigs has provided a premium price for a lean type of pig. which will soon be the predominant type of carcase offered to the trade. This is made easier, and aefually improved on, by recent importations of a breed producing length of carcase and development of hams hitherto unseen in New Zealand. Bacon bought from the grocer has unfortunately suffered during processing, as does most other meat. One can prove this point by eating home-killed bacon at one's country cousin's.—Yours, etc, I.C.W.
