Sir, —Recently I read with much concern the article on Continental cooking. I would be most ’ interested to know how the Mr Sussman gained his facts about the exact number of cordons. bleus in the world, and that there are three of them in Christchurch. A Louis of France first awarded this distinction to one of his chefs. It would be possible, probably, to ascertain the number of people who have been awarded the “cordon,” but to know that there are only 397 alive in the world is very distressing, My own certificate, ribbon and medal from one of the English colleges is No. 659. As there are other colleges in France and Scotland, instructing and examining for the award, ft would appear that our death rate must be very high, and by expectation of life correspondingly low.
