Milk Quality
Sir.—ls it the same old story? For how many seasons have we heard that the solids-not-fat content of Canterbury milk was to be investigated? Was it not stated years ago that Jersey cows would improve town milk herds? Breeding and culling now achieve solids abroad, partly because butterfat is not so popular. Seemingly, animal fat settles in the arteries, causing heart trouble.—Yours, etc., CALCIUM. May 6, 1959.
