Paler Butter From New Zealand
Because New Zealand dairy herds are predominantly Jersey cows and are fed mainly on green pastures. New Zealand butter has a high carotene content which makes it bright yellow.
The New Zealand Journal of Science and Technology has brought to light a finding which may have commercial importance in selling New Zealand butter abroad When treating bloat, it has been found the liquid paraffin administered to cows causes paleness in the colour of their butter. The majority of consumers in Europe prefer it that way, says “Health.” the magazine of the Health Department.
