MIS-SHAPEN POTATOES
Badly shaped potatoes can be responsible for heavy losses in peeling. In a bulletin issued' by the Canterbury Chamber of Commerce, Dr. I. D. Blair, of Canterbury Agricultural College, Lincoln, says that there is evidence of up to 25 per cent, peeling loss in some varieties almost entirely connected with poor tuber shape. It was a matter of doubt whether removal of digger bruises would lead to anything like the peeling or paring loss which might arise through mis-shapen tubers, as for instance in the Dakota variety. In a Canadian survey it had been recorded that waste from peeing averaged 20 per cent, of weight during a three-year period.
