THE BODIES OF CRAYFISH
Sir.—Some questions I asked re S2 Ry based on a question asked in Parliament by Mr Freer the answer to which I have not seen reported. I am now in a position to answer them, so may I share my information with your readers The tailless crayfish of course dies, and to some places the separation is done out an< * the body wasted. I am told, however, that this is not a large proportion of its value, so that the waste is not so bad. Locally, I understand that the seperation is often done on shore and the legs etc processed to produce a saleable food’ This seems preferable, and could well be done everywhere. Sea food is never too plentiful. I would be glad if some authority could confirm or refute my statements.—Yours, etc., J.J. October 19, 1955.
