FRESH CREAM AGAIN AVAILABLE
INCREASE IN PRODUCTION OF MILK Fresh cream is being delivered by milk vendors in Christchurch. The Christchurch Milk Company had been distributing homogenised cream and homogenised cream mixed with fresh cream since February, when a fall in milk production stopped separation oj milk surplus by producer companies. In the last three weeks the winter milking flush has increased, and the percentage of homogenised cream that has been added to fresh cream has been reduced gradually. Fresh cream will whip better than the homogenised or the mixed product. “The present seasonal increase in milk production above the requirements of Christchurch has ensured that sufficient surplus milk is available for daily separation for the sweet cream trade,” said the manager of the Christchurch Milk Company (Mr N. S. H. McCann). “All cream for distribution through vendors to the consumer will now be from separated milk. The company is honourings its promise that when a surplus was available sweet cream would again be delivered. Sweet cream has been mixed with homogenised cream whenever possible.”
