COURSE TO ?E HELD AT MASSEY COLLEGE DEMAND FOR TECHNICAL INSTRUCTION • A special short course in the production, treatment, and distribution of city milk will be held at Massey Agricultural College, Palmerston North, from August 29 to September 2. and it is understood that some Canterbury dairymen will attend This course has been introduced in response to a demand for technical instruction in the treatment of milk for liquid consumption, which is receiving increasing attention in the Dominion. It has been particularly designed for those already engaged m this trade, and is intended, as far as the short time available will permit, to provide those in attendance with the most modern knowledge on the application of scientific knowledge to the town milk trade. The course will last for a week, and has been arranged to coincide with

the second week of the August school l holiday vacation, so that those who have contracts for the supply of milk to schools may attend. Lectures, accompanied by laboratory and practical demonstrations, will be given on the following:—Methods of producing clean milk, including the design of milking sheds, plant, and milk-treating equipment; factors affecting the fat and solids-not-fat content of milk; causes and control of common defects in raw milk; methods of assessing the purity of milk, including methods of *- determining dirt, acidity, bacterial , counts, and keeping quality of milk, and the comparative value of different tests; the operation and effects of pas- ' teurising milk; factors of special practical importance in the pasteurising • of milk; the bottling of milk and the methods of washing milk bottles; mechanical refrigeration of milk; the n: care of milk in distribution. pi The milk-treating plant installed in the college dairy building by the De- r£ partment of Health will be used for inspection and demonstrations.
