KNOWIffiDGS OF POACHING
POSITION OF PASTRYCOOKS.
The Acclimatisation Society authorities are aware .that hundreds pf swan eggs are poached from Lake Ellesmere each year and find their way into the City and elsewhere, bat pastrycooks deny that they some to tbem, as was stated by Mr K, Campion at Wsdaesday night's meeting of th* Council of the Society.
An pincial pf the Society said yeoteiday that, some years ago, it w## * h e policy to collect some of tie <eggs on the lake and sell them to the pastrycooks at about 4s 6d a dozen. It was held that a swan egg was equal to four or five hea oggs in weight. Last y<s&r, however, the Society collected no eggs off the lake.
A representative of the trade said it was well known that some pastrycooks bought swan eggs from the Society seme years ago. For some goods they were very suitable, and it was good practice to use them- However? be had SPt seen any for iwo pr three years, *4d the price of hen eggs in recent fears made their use hardly worth while.
