FURTHER PROGRESS OF LOCAL | FIRM. "THE LOAF WITH THE" NUTTY FLAVOUR" NOW TRADE-MARKED. Messrs Sfcacey and Hawker, proorietors of the Essex street Bakery, £ave just completed their sixth year of business at Linwood, and tlheir hooks show the enonnous strides their bread has made into the public favour. No less than 3,000,0001b of bread were, turned out during the last 12 months ended April 30th. The dough is mixed by machinery, and when properly fermented with compressed yeast and malt bread improver, it is weigjhed off by automatic dough dividers afc the speed of 64 loaves per minute. S.X THE TRADE-MARK. The loaves are well baked, and,in future will bear the firm's registered trade-mark, which consists of the two letters S and X, framed in an octagonal border. Messrs Stacey and Hawker's premises are known as the "Essex"' Bakery—the-name being derived from Essex street, Linwood, their location—and the letters SX were chosen as being symbolical of this name. This trade-mark, a guarantee of good faith, protection, and good bread, . will be found on either end and Hawker loaf, or imprinted on the top in perforated letters. It will be tho constant endeavour of these progressive bakers to see that the high standard of quality set in the past is maintained, or even surpassed, in the future. The firm caters both for retail and wholesale requirements. Special ovens have been imported for dealing with huge quantities, and will soon be erected to add to the already large plant.
