Economy in the use of food was discussed at a meeting held in the Melbourne Hospital last week, at the instanco of the Hospitals' Board of Supplies. The occasion was a lecture delivered by Mr J. Lang, a member of the Hospital Committee, who gave those present the benefit of his e*P e " rience in a British military hospital and elsewhere. Mention by Mr Lang of economy effected by examining the contents of the refuse buckets at tne military hospital, so as to ascertain the class of food rejected by patients, drew from Mr Howard Berry a remark that he had heard of scandalous waste of food in military camps here, and was Dot aware whether this had been chccked or not. Mr Lang, who showed himself to bo an enthusiastic investigator of culinary methods, mentioned that ho had gone into the kitchen of one of the first-class hotels to learn carving, and had been told by the Tironrietor that ho saved thr?e joints of meat daily by employing an expert carver. A lady present vouched for the economic result obtained by t.sing tea extract instead of tea le(ives at a soldiers' rest- home. Speakers testified to the saving effected bv the system of aggregate purchasing followed by the Board. There were advocates of a common laundry for all the hospitals, and the use of the Melbourne Hospital for a moat distribution centro,. complaint being mado of the price and quality of the meat supplied .to hospitals.
