Sir, —In answer to the very uncomplimentary remarks made by "Dainty" in Monday's "Press," I should like to say a few words. In the first place, I don't think by the way "Dainty" refers to butchers that he can be any judge of what a tradesman really _». a.s there are several butchers working in Christchurch at the present time that would be hard to beat in any part of the world as far aa tradesmansnip is concerned. Hint I can safely say, ;ind I have seen a little bit of the country, and have not been thirty years in New Zealand either, so I have had a chance of seeing other cities. Then, again, "Dainty" seems to think that meat should be carved up in New Zealand the same as it is in England, but if he is a person who takes notice of different customs he will see that every ce'i'ny lias a different way of cutting up meat.
