TO THB BDITOB OP THB PRESS. Sib,—Looking over the baker's biU, I think we are considerably over-oharged for bread at Kaiapoi. I will begin wit— the very top price of wheat, 2i Cd per bushel, 43 bushela of wheat will produce one ton of flour, cost £6. Now, sir, I will come to the price of bread, 61 the 41b loaf on a month's tick, which I caU cash. Now, lOOlbs of sound flour wfll produce thirtyfour Alb loaves of bread; this, at 6d the loaf, which will realise 17s on the lOOlbs of flour; now, that multiplied by twenty gives the amount of £17, or a profit of £11 on the forty-eight bushels of wheat, which I think a pretty fair return on the outlay of £6 divided profit between the miller and baker. Now, the price that is charged for the offal should amply pay the mfller for grinding, and the sacks are generaUy returned from the baker. I think the mfllerß and bakers are reaping a much better harvest from grinding and baking than the farmers, who have been, in many instances, obliged to sell at from 2s to 2s 4d per bushel.
