Sib,—As I was sitting the other evening at the tea table, my better half was stating what she was paying for bread. So when I had finished my tea I thought I would iust work out the profits. So I began with the miller first. New, sir, I have been informed that 45 bushels of wheat will produce one ton of flour, now 45 bushels of wheat at 3s 6d per bushel amounts to £7 17s 6d, allowing the offal to cover the expense of grinding, leaves the miller a profit of £2 2s 6d per ton, allowing the flour to be £10 per ton. Now, sir, I turn to the baker, and I think he is getting the best of it. lam informed that l-Olbs of good sound flour will produce 34 four pound loaves of bread. Now 34 loaves at 7d, the price at Kaiapoi, will give a return of 19s lOd on the outlay of 10s for lOOlbs of flour, or a profit of 9s lOd on. the. outlay of 10j. I think, Mr Editor, there is room for a little reduction in the (price of bread, for it seems a little too stiff .now cash is rather scarce and difficult to get hold of by the working man.
