Report May 18th. 1880 -.— Physical Characteristics—A well made. bread, of excellent taste, cleaa and white. Water—42*39 per cent. Ash—l*o7 per cent. Aram—Nil Sulpharie Acid—Trace only Copper—Nil Iroa—Nil Tartaric Add—Nil Reaction of Aqueous Infusion—Slightly acid 'Do. of Ash—Alkaline Color of Ash—White From the above analysis it will be seen that the Bread obtained from Mr Hopper still maintains the high standard of quality indicated by the previous analysis. Alum—Nil Sulphuric Acid—Trace oaly Copper—Nil Iron—Nil Tartaric Acid—Nil * [ Reaction of Aqueous Infusion—Very slightly acid - Do. of Ash—Alkaline Color of Ash—White Thß above analysis proves this sample of bread to be genuine aad aaadulterated, the general appearance and make,. however, is. not eousi to that of the sample formerly analysed. The saline taste, noted was found upoa investigation to be due to an excess of salt, amounting to about one-fifth in excess of that ooataiaed in another sample, which was obtained subse-quen-ly, for the purpose of comparison.
