I am happy to state that the irregularity complained of is entirely done away with in the method I adopt, and I am now SUPPLYING PBEAD superior to any in Christchnrch. I have also made arrangements with the Public Analyst to sample and report upon my Bread at any time, which will give the publio a* guarantee that his analyses will be a just one. Ash—99 per cent. Alum—Nil Sulphuric Add—Trace only Capper—Nil Iron—Nil Tartaric Add—Nil Reaction of Aqueous Infusion—Shghtly aend Do. of Ash—Alkaline Color of Ash—White The above results prove this to be a first-class eaianle of Bread, perfectly free from adulteration.
