PRESERVED MEAT.

The circular of the N<>w Zealand Lean and Mercantile Agency Company, Limited, dated London, Nove-ib^r 16th, reports: —

It is "satisfactory to observe that, r.otvvithstandstfitiding the recent heavy arrivals of this article, there seems 'to be an indication that it is going more largely into consumption than has lijlhtn't > been the case. That tin's has. in a great decree, been assisted by the high price at "which butchers meat contin-ies to rule, is an undoubted fact. Still, it must be borne in mind that, in the endeavbr to create and stimulate a demand throughout the metropolis and in the provinces, much prejudice, especially amongst the working classes, will be found to exist ; and, until they shall have been prevailed upon to make full trial of the the article, and gradually become habituated to the taste, it cannot be expected that a steady demand for any large qumtity will be maintained for home consumption. The shipping and export trade will doubtless, from time to time, appear in the market as buyers, but these outlets cannot be regarded in so important a light for the future, as the home trade.

In orde-- that, those interested m shipments may co-operate eff -ctually with those to whom the sale of the article is here entrusted, it is needful that several important considerations should be attended to 'viz/: —

ls-t. rhiifc the tius before being finally soldered, should be freed from any superfluous liquid, which, if allowed ho remain in them, is a fruitful source oi their being " blown," and consequently

useless

2nd. That the tins should be filled and made as uniform as possible in weight, according to the size at. which they are invoiced.

3rd. That the tins should be properly painted and Libelled, and the outside cases marked clearly exhibiting the size and number of tins contained in them. . .

4th. That each shipment should, if practicable, cont un an assortment of tius varying from 2 lbs to ' 6 lhs net.

K these hints be carefully followed out, prevention will be given to numerous complaints made by wholesale buyers, who have to respond to claims constantly being set up, and often, with •justice, by their retail eust liners. From the existing prejudice to which allusion has been made, 'it is manifest that, any att?mpt. Unduly t> keep up pries would have the immediate effect of curtailing consumption. The present quotations subjoined mush therefore bo regarded as being those at which it is hoped that a afce;<dy and increasing business may bn done; but if," in the earlier stages of t!i<j town and country trade, an effort is made on the part of holders materially to advance oh these prices, the margin between the retail figures and those for fresh me:it would be so n irrow that the end, so much desiired, of increasing consumption would be nulified.

We have thought it risfhtr, on the present occasion, to enter tit some length into the position of the article iv this marljct, a-< a strong effort has been lati'lv made to stimulate the consumption of it amongst the masses, with what degree of success will shortly bo seen ; an 1 as we trust that it is one which may bulk largely in the future exports of the Australian colonies, the foregoing particulars may prove of use to intending shippers. The following aro our irmrke't quotations : — 3EEF. 2lb Tins ..". ... hone in the market. ? » <j° ••• ■•1 6d to6id per lb. 4 „ do ) L 6 „ do ... •• oi-d to 6d „ iUTTOX. 2 „ do ... ... none in the market. ? " ) sifHos.Vd perlb 4 „ do J " r 6 „ do 4Jd tosd 2 lb tins are in much demand for small households, and would sell readily, were there any oil the spot.

A surgeon states that one of his patients recently had some trouble with h. saw-mill, and got a piece of skin about the size of a tea-saucer torn from his hip. The surgeon grafted on the skin of a young rat, and in ten days the cure was complete. The surface of the wound is covered with a fine growth of hair, and the , ratskin seems tc answer every purpose. The only inconvenience to which the patient is subjected is fro.n cats. On several occasions, when sitting down reading, he has been put to no little alarm and inconvenience by having the house cat spring suddenly oil hirii and fasten her teeth in that portion of his pantaloons which immediately covers the transplanted ratskin. The terriers also, sniff suspiciously at his heels when he walks the streets. We do not vouch for the accuracy of the above. We simply give it as told to us. — 'London Figaro. A Judge was on one occasion administering a rebuke 'to a lawyer who came into Court drunk 1 , when the following coloquy took place :-— " Did your Honor speak to me ?" — '" i did, sir. I said, sir, that it is my opinion you disgrace yourself and yOur family, the Court and the profession, by your course of conduct." — " May i-i-it please your Honor, I have been an attorney in this Court for fifteen years, and. permit me to" say, j*6ur Honor, this is the firsb correct opinion I 'ever kae w -you to give !
